Chocolate Chip and Oat Cookie Traybake

This recipe is my own version of 'Peanut Butter, Chocolate Chip and Oat Cookies' from 'The Great British Bake Off, Perfect Cakes and Bakes to Make at Home', which I have left a link for you at the end of this post.
These cookies will melt in your mouth. If you want to try and make them, here's how! 


You will need🍩:

115g unsalted butter
100g caster sugar
75g brown sugar                                                                  
1 medium egg
1/2 teaspoon of vanilla extract
150g porridge oats
70g plain flour 
1/2 teaspoon bicarbonate of soda
1/2 teaspoon ground cinnamon
Your preferred amount of Milk chocolate
Your preferred amount of Raisins
Any extra Flavourings of your choice

MethodπŸ˜‰:

1. Soften the butter in the microwave before putting it into a mixing bowl with the brown and caster sugar. Then, stir with a wooden spoon. When you have done this, mix with an electric whisk until it makes a lighter consistency.
2. In a separate bowl, beat the egg and the vanilla extract together and pour it in with the other mix. Whizz this together for one minute.

3. Sift the flour with the bicarbonate of soda and cinnamon. Try not to cover your phone, or any other item around you in it like I did!😁 Oops! Add the oats and mix with a wooden spoon.
4. Place the milk chocolate in a food bag and bash with a wooden spoon until it is all of equal, small sizes. Drop this into the mixture along with the raisins and white stars. Mix until all items are evenly distributed.
5. Chill this in the fridge for 45 minutes plus to firm up the mixture and preheat the oven to 180°C.

6. Once your mixture is firm, but not too firm, take handfuls of it and press it into a lined baking tray, You may need two. Bake in the oven for 15 minutes until golden with darker edges.


7. Leave to cool in the tray for two minutes. Don't worry if your cookie-tray bake feels soft because it should harden as it becomes colder.
8. When the biscuit is firm, cut into rectangles and put on a cooling rack (remove tray and baking paper). Your creation should be ready to enjoy!
