Cherry and Cocunut Cakes!!!
Today, I thought I would show you how to make these really tasty cherry and coconut cakes...
For the cakes:
- 8oz unsalted butter (softened)
- 8oz caster sugar
- 4 eggs
- 9oz flour
- 1 heaped tsp of baking powder
- 10 glace cherries
- 25g desiccated coconut
For the decoration:
- 240g unsalted butter (softened)
- 400g icing sugar (sifted)
- 2 tsp vanilla extract
- 4 tbsp milk
- Sprinkles
1. Preheat the oven to 160°. Put butter, caster sugar and eggs into a mixing bowl and use an electric mixer to blend them together.
3. Chop up the glace cherries into quarters and put that into the mix along with the coconut. Blend a bit more.
4. Put cupcake cases into each section in a cupcake tin and fill each case equally. Bake for half an hour.
5. To make the buttercream icing, I used a recipe from one of Zoella's videos which I will leave a link at the end of this post. I've only recently started using this recipe but it's SOOO delicious!😋
6. Before you ice the cakes, wait until they are COMPLETELY cool. Put the nozzle into the bottom and spoon the icing into the piping bag. I used a No. 118 Kitchen Craft Petal Nozzle (link at the end of post) and a plastic, disposable piping bag. To create the flour-kind of pattern, squeeze the icing out moving your hand back and forth, around in a circle.
