Crunchy Cranberry Melt-In-Your-Mouth Cookies
Hello everyone and welcome back! At the moment, I haven't baked a lot so I decided to restart my hobby with some 'Millie's Cookie' style treats. This is my adapted version of the BBC Good Food's recipe which I will link at the bottom of the page. This recepie makes 12 cookies! Here's how to make this tasty treat:

- 1 Egg
- 1 tsp Vanilla extract
- 100g Demerara Sugar
- 125g Butter
- 125g Granulated Sugar
- 100g Dried Cranberries
- 225g Self-Raising Flour
- Pinch of Salt
1. Mix together the butter and sugars.
2. When this is done, add the egg and vanilla extract.
3. Stir again.
4. Sift the flour and salt into the mixture and finally, stir the cranberries in well.
5. Separate into 12 separate cookies and lay on a lined baking tray (I used two). You don't necessarily have to make it into 12.
6. Bake at 180°C for 15-20 minutes but keep checking them throughout the process. They will not be completely firm when done and cool as they harden. Also, you want them to be slightly chewy when you eat them.
